Who doesn’t love breakfast? Anyone that says they aren’t a fan of the most important meal of the day is probably lying to you. There is nothing better than waking up to a hot cup of coffee and a delicious meal; it can really set the tone for your day and get you on the right track!

So, breakfast can be ridiculously tasty – we’ve established that. But did you know that you can also really make it something to look forward to by finding new and exciting ways to incorporate eye healthy ingredients into your morning meal? Any opportunity to get your eyes the nutrients that they need to function properly is an opportunity worth taking!

We’ve put together some of our favourite breakfast recipes, all of which can give you the vitamins that you need to keep your vision on top of its game. Have a great morning with these fantastic meal ideas:

Kale and Ricotta Omelette

Ah yes, the old classic. Omelettes have been the backbone of a hearty breakfast for as long as anyone can remember – and there’s a great reason for that: they’re delicious. Taste aside, omelettes are an awesome vehicle for delivering nutritious veggies into your body. This Kale and Ricotta Omelette does a fabulous job of just that by giving you a solid dose of one of the world’s best eye health superfoods. Kale, much like other leafy greens, comes jam-packed with lutein and zeaxanthin – powerful antioxidants that will supercharge your sight. These carotenoids will strengthen your retina and greatly reduce the risk of age-related macular degeneration.

Although the flavour of kale can often be a turn off, throwing it into a cheesy omelette will offset its bitterness. This omelette is as filling as it is healthy, so if you’re in the mood for a big breakfast, put this recipe at the top of your list.

Toasted Bagel with Avocado, Cream Cheese, and Dill

Looking for a breakfast on-the-go that won’t leave you hungry in an hour? Try this creamy Toasted Bagel recipe. Bagels are known for their density, and when combined with the fatty goodness of cream cheese and avocado, you’ve got yourself a true comfort food breakfast. So what makes these bad boys so healthy? Why, avocados of course! Avocados are an eye health favorite for their high content of lutein and zeaxanthin which, as we know from above, are great for your eyesight.

Have you ever tried mixing avocado and cream cheese? It just might blow your mind. Take your breakfast game to new heights with this great bagel!

Brussels Sprout Hash with Sweet Potato and Bacon

Warning: this next recipe might be too delicious to wrap your head around. Introducing Brussels Sprout Hash with Sweet Potato and Bacon. This crazy combo of chopped brussels sprouts, sweet potatoes, bacon, and eggs just might be one of the tastiest (and most visually appealing) breakfasts that we have ever laid eyes on.

Now let’s be honest, not everyone is a fan of brussels sprouts. Even the most discerning of taste buds will find something to enjoy in this mash though – and the eye health benefits make it worth it. Despite their bad reputation, these sprouts are loaded with vitamin C and zeaxanthin which are crucial for maintaining good eye health. Vitamin C will even protect your peepers from the harmful effects of ultraviolet light!

Sweet potatoes are unquestionably tasty and they can also do great things for your vision. Very few other veggies can hook you up with your daily dose of vitamin A, beta carotene, potassium, and fiber all at the same time.

Finally, don’t forget to top your hash off with a nice, fried egg. There is really nothing better than mopping up some of that yummy, gooey yolk with this chopped sweet potato and brussels sprouts goodness. Also, you’ll be pleased to find out that eggs are major sources of nutrients like lutein, zeaxanthin, zinc, and omega-3 fatty acids. Both your eyes and your stomach will thank you for this one!
